Domaine Chanson is a revered producer in Burgundy, known for crafting wines that reflect the true essence of their terroir. Savigny-Dominode 1er Cru Rouge 2019 comes from one of the finest vineyards in the Savigny-lès-Beaune appellation. The Dominode plot, located on the eastern slope of the village, is renowned for its old vines, which lend the wine concentration and depth. The 2019 vintage was characterised by ideal conditions, producing wines with richness, balance, and superb ageing potential.

The soil composition of this vineyard, rich in limestone and clay, contributes to the wine’s minerality and structure. Chanson’s careful winemaking, with gentle extraction and ageing in French oak barrels, allows the wine to retain its freshness and express the character of the terroir.

Appearance: Deep ruby with purple highlights, showcasing its youthful vibrancy and concentration.

Aroma: The nose is intense and complex, with ripe aromas of red cherry, raspberry, and blackberry, intertwined with earthy notes of underbrush, truffle, and a touch of tobacco. Hints of violets, dried herbs, and subtle spices from the oak aging, such as clove and cinnamon, add depth to the aromatic profile.

Taste: Medium to full-bodied, the palate is rich and velvety, offering concentrated flavours of red and dark berries balanced by savoury undertones of earth, leather, and dried herbs. The tannins are smooth yet structured, providing a firm backbone, while the wine’s bright acidity lifts the fruit and adds a refreshing balance. Subtle notes of spice, along with a touch of oak, round out the palate.

Finish: Long and elegant, with lingering notes of red fruit, earthy minerality, and a hint of spice. The finish is both refined and vibrant, with fine tannins and a lively acidity that promise excellent ageing potential.

Pairings: Roast lamb with rosemary, garlic, and a red wine reduction. The wine’s earthy and herbaceous notes will pair beautifully with the flavours of the lamb, while its bright acidity cuts through the richness of the meat.

Mushroom risotto with Parmesan and truffle oil. The wine’s savoury character and silky tannins will complement the umami flavours of the mushrooms and truffle, while its acidity balances the creaminess of the risotto.

Chanson Savigny-Dominode 1er Cru Rouge 2019 is a beautifully structured wine with both power and elegance. Its combination of ripe fruit, earthy complexity, and fine tannins make it an ideal match for hearty dishes or for further cellaring to develop more nuanced flavours. This wine can be enjoyed now for its vibrancy or aged for another 8–10 years to unlock even greater depth.
