Cobaw Ridge, a small family-owned winery in the Macedon Ranges of Victoria, is known for its commitment to biodynamic farming and minimal-intervention winemaking. The ‘High Density’ Pinot Noir is a particularly special wine, crafted from tightly spaced vines that produce low yields, resulting in exceptional concentration and complexity. Located in one of Australia’s coolest wine regions, the high altitude and granite soils of Cobaw Ridge contribute to a Pinot Noir that is elegant, structured, and layered. The 2022 vintage benefitted from a long, cool growing season, resulting in a wine with purity, finesse, and vibrant acidity.

Appearance: Pale ruby with bright garnet edges, showcasing the wine’s youthful vibrancy and delicate concentration typical of high-quality Pinot Noir.

Aroma: A beautifully expressive nose of red cherry, wild strawberry, and raspberry, with underlying notes of dried rose petals and violet. Earthy aromas of forest floor and subtle spice like clove, cinnamon, and a touch of cedar add complexity, while a slight hint of minerality reflects the granite soils.

Taste: Medium-bodied and finely textured, the palate offers a balance of fresh cherry, raspberry, and cranberry alongside savoury notes of dried herbs, mushroom, and soft spices. The tannins are silky and well-integrated, providing structure without overwhelming the delicate fruit. The bright acidity enhances the wine’s freshness, lifting the flavours and adding energy to the palate. Subtle oak influence imparts gentle spice and adds depth to the wine without overpowering its natural elegance.

Finish
Long and refined, with lingering red fruit, a touch of spice, and a clean, mineral-driven finish. The acidity remains vibrant, ensuring the wine finishes with freshness and finesse, promising further complexity with age.

Food Pairing
This elegant Pinot Noir pairs beautifully with duck breast with a cherry reduction, where the wine’s acidity and red fruit complement the richness of the duck. It would also work wonderfully with mushroom risotto or herb-crusted salmon, enhancing the savoury, earthy notes of the dishes while balancing the richness with its vibrant freshness.
