Santero, a well-known winery in Piemonte, Italy, is recognised for its innovative approach to winemaking while respecting regional traditions. Dile Gold Riserva is a bold and expressive blend of Barbera and Tempranillo, showcasing the depth and character of these two varietals. Aged to enhance its richness, this wine embodies a balance of Italian vibrancy and Spanish intensity, creating a full-bodied yet smooth drinking experience. The careful selection of grapes and controlled ageing process result in a wine with structure, complexity, and a refined finish.

Appearance: Deep ruby red with garnet reflections, hinting at its maturation and complexity. The wine coats the glass with slow-moving legs, indicating its richness and moderate alcohol content. At the core, it is almost opaque, showing its concentration, while the edges reveal a subtle brick hue, suggesting some ageing. The texture appears velvety and dense, promising a bold and layered tasting experience.

Aroma: Intense and layered, offering ripe dark cherries, blackberries, and plums at the forefront. Notes of vanilla, sweet spices, and cocoa emerge from oak ageing, complemented by a touch of leather and dried herbs that add complexity.

Taste: Bold and structured, with juicy dark fruit flavours balanced by well-integrated tannins. The Barbera brings lively acidity, giving freshness to the wine, while the Tempranillo contributes depth and a smooth, velvety texture. Hints of dark chocolate, tobacco, and baking spices develop as the wine opens up, adding layers of intrigue.

Finish: Long and persistent, with lingering notes of dark fruit, spice, and a pleasant earthy undertone. As the wine evolves in the glass, secondary layers of dried tobacco, espresso, and a touch of leather emerge, adding complexity and depth. The tannins, initially firm, soften with aeration, leaving a velvety mouthfeel. A final whisper of dark cherry and toasted oak lingers, creating a refined and memorable finish.

Food Pairing: Pairs beautifully with slow-braised beef short ribs, where the wine’s acidity and tannins cut through the richness of the meat while complementing the depth of flavour. Also excellent with aged Manchego cheese, as the wine’s fruitiness contrasts beautifully with the cheese’s nutty and slightly salty character.
