Cefalicchio, a renowned winery in the Puglia region of southern Italy, is celebrated for its commitment to biodynamic viticulture. The Romanico 2015 is crafted exclusively from the indigenous Nero di Troia grape variety, reflecting the unique terroir of the Castel del Monte area.

The 2015 vintage experienced favourable weather conditions, contributing to the development of grapes with excellent ripeness and balance. The vineyards, situated at altitudes ranging from 250 to 350 metres above sea level, benefit from calcareous, slightly clayey, and stony soils, combined with a typically dry climate, providing an ideal environment for cultivating Nero di Troia.

Appearance: The wine exhibits a deep ruby-red colour with subtle violet reflections, indicating its richness and youthful vibrancy. The clarity and brilliance in the glass reflect meticulous winemaking practices.

Aroma: On the nose, it offers intense aromas of ripe cherry and plum, complemented by subtle spicy notes of thyme and a touch of liquorice. As the wine opens, hints of blackcurrant and wild berries emerge, adding complexity to the aromatic profile.

Taste: The palate is full-bodied and well-structured, showcasing a harmonious balance between freshness and warmth. Flavours of juicy raspberry and cherry are interwoven with spicy nuances and a hint of dark chocolate. The wine's velvety tannins and balanced acidity contribute to a smooth and enjoyable mouthfeel.

Finish: The finish is long and pleasantly flavoured, with the fruity and spicy notes gradually giving way to a lingering aftertaste of subtle herbs and a touch of minerality. The wine's balanced structure ensures a satisfying and memorable conclusion.

Food Pairing: This Nero di Troia pairs exceptionally well with savoury dishes such as lasagna, veal filet with wild mushrooms, and aged cheeses. The wine's depth and complexity enhance the richness of these dishes, making it a versatile companion for a variety of culinary experiences.

The Cefalicchio Romanico Nero di Troia 2015 exemplifies the winery's dedication to producing wines that capture the true essence of Puglia's indigenous grape varieties and terroir, offering a distinctive and enjoyable tasting experience.
