Oak Valley Estate, established in 1898 in the cool-climate region of Elgin, South Africa, has a rich history of agricultural excellence. Founded by Sir Antonie Viljoen, the estate has evolved over the decades, with a strong focus on viticulture since the late 20th century. The Tabula Rasa series represents Oak Valley's commitment to producing exceptional single-clone wines that express the unique terroir of their vineyards. The vineyards are situated high along the Groenlandberg Mountain Range, benefiting from one of the coolest wine-growing climates in South Africa. The 2021 growing season commenced slightly earlier, following a winter with below-average rainfall and above-average temperatures. A significant spring rainfall event brought 135mm of rain and some hail over a single weekend, leading to reduced crop sizes due to millerandage. The summer was mild with cool nights, ensuring gradual ripening and retention of high natural acidity. Grapes were hand-picked from selected vines within the South Ridge block, focusing on the CY95 clone known for contributing acidity and length to the wine. Whole bunches were gently pressed to obtain the best free-run juice, with spontaneous fermentation occurring in lightly toasted French oak barrels from artisanal Burgundy cooperages. The wine matured on fine lees for 10 months, enhancing its complexity and structure.
