Allevare is a boutique winery based in Gippsland, Australia, founded by Lucy Kendall and Alysha Moscatt. With a focus on minimal-intervention winemaking, they lease vineyards across Victoria, carefully selecting sites that allow for expressive, terroir-driven wines. Their 2023 Pinot Gris is sourced from Geelong, a cool-climate region known for its diverse soil types and maritime influence, which enhance both freshness and complexity in the final wine.

The grapes are hand-picked and gently pressed, with fermentation taking place in stainless steel to preserve fruit purity. A short period of lees ageing adds texture and depth while maintaining the wine’s bright, vibrant profile. The result is a Pinot Gris that balances crisp acidity with ripe fruit and subtle minerality, making it both refreshing and food-friendly.

Appearance: Pale gold with delicate copper hues, suggesting minimal skin contact during fermentation. The wine is clear and bright, with fine, quick-forming legs that indicate balanced alcohol and a fresh, lively character.

Aroma: Aromatic and inviting, with ripe pear, white peach, and lemon zest at the forefront. Floral notes of honeysuckle and jasmine add elegance, while a faint minerality and hints of almond provide depth and complexity.

Taste: Crisp and fruit-driven, with flavours of green apple, nectarine, and citrus zest. The bright acidity keeps the wine refreshing, while a touch of lees ageing adds a slight creaminess to the mid-palate. A subtle herbal note and a hint of spice bring extra layers of interest.
