Aurelio Settimo, Barolo DOCG Magnum 2018
Aurelio Settimo is a small, family-run winery in La Morra, one of Barolo’s most prestigious villages, known for crafting wines that reflect the elegance and power of Nebbiolo. Following a traditional approach, the winery focuses on minimal intervention and long ageing in large Slavonian oak barrels to enhance structure and finesse. Their Barolo DOCG Magnum 2018 is a special large-format bottling, ideal for long-term ageing, as the magnum size slows down maturation, preserving freshness while allowing complex flavours to develop. The 2018 vintage showcases a refined balance of fruit, acidity, and firm yet polished tannins.
Appearance: Deep garnet with a luminous brick-orange hue at the rim, characteristic of Nebbiolo’s ageing process. The wine is beautifully translucent, with slow-moving, well-defined legs indicating a full-bodied structure and balanced alcohol. The magnum format enhances its clarity and vibrancy, ensuring a graceful evolution in the bottle.
Aroma: Highly aromatic and complex, with layers of ripe red cherries, wild strawberries, and dried rose petals. Earthy undertones of truffle, forest floor, and tobacco add depth, while hints of liquorice, cedar, and balsamic bring additional intrigue. As the wine opens, delicate nuances of dried orange peel, white pepper, and anise emerge, enhancing its aromatic finesse.
Taste: Silky yet structured, with a core of vibrant red fruit, including sour cherry, cranberry, and pomegranate, balanced by lively acidity. The tannins are firm but well-integrated, providing depth without overpowering the fruit. Mid-palate notes of liquorice, nutmeg, and dried herbs add layers of complexity, while a mineral streak from the limestone-rich soils lends precision and elegance. The large-format bottling enhances freshness, allowing the wine’s nuances to unfold slowly over time.
Finish: Exceptionally long and evolving, with lingering notes of dried roses, red fruit, and a touch of savoury spice. The tannins remain persistent yet polished, ensuring excellent ageing potential. A final flourish of truffle, balsamic, and cedar lingers gracefully, leaving a sophisticated and memorable impression.
Food Pairing: Pairs beautifully with braised lamb shank, where the wine’s structure and acidity balance the dish’s richness while complementing its deep, savoury flavours. Also an excellent match with aged Castelmagno cheese, as the wine’s complexity and tannic grip enhance the cheese’s sharp, nutty character.
