With a focus on sustainable viticulture and minimal intervention, the estate produces wines that highlight the freshness, minerality, and precision that define Chablis. The Chablis 1er Cru Côte de Jouan 2022 is a refined and expressive Premier Cru, showcasing the balance of crisp acidity, delicate fruit, and a distinctive mineral backbone.
Côte de Jouan is a lesser-known but highly regarded Premier Cru vineyard, benefiting from east-facing slopes that allow for slow, even ripening. The Kimmeridgian limestone soils, rich in marine fossils, provide structure and an unmistakable flinty minerality. Fermentation takes place in stainless steel to preserve freshness, while extended lees contact adds texture and depth, creating a wine that is both vibrant and layered.
Appearance Pale gold with light green reflections, displaying brilliant clarity and a luminous sheen. The wine’s crisp, shimmering colour suggests youthful vibrancy and bright acidity, while its smooth movement in the glass hints at a well-balanced texture.
Aroma Fresh and complex, with aromas of lemon zest, white peach, and green apple. Subtle floral hints of acacia and chamomile add elegance, while classic Chablis minerality, reminiscent of crushed oyster shells and wet stone, provides depth. A delicate touch of almond and brioche from lees ageing enhances the aromatic complexity.
Taste Precise and structured, with vibrant acidity lifting flavours of citrus, pear, and tart green apple. The mid-palate reveals a fine saline character, balanced by a smooth, lightly creamy texture from lees contact. The interplay of bright fruit and flinty minerality creates a refined and well-integrated profile, maintaining both freshness and depth.
Finish Long and mineral-driven, with lingering citrus, subtle floral notes, and a distinct chalky salinity. The acidity remains persistent, leaving a crisp, mouth-watering finish that highlights the wine’s elegance and ageing potential.
Food Pairing Pan-seared scallops with a lemon beurre blanc enhance the wine’s vibrant acidity and delicate minerality, creating a perfectly balanced pairing. Fresh oysters with a shallot vinaigrette highlight its briny complexity, making for a classic and refined match.
