Kilikanoon Covenant Shiraz 2022

Kilikanoon, located in the Clare Valley of South Australia, is recognised for producing premium Shiraz and Riesling with a distinctive regional character. The Covenant Shiraz is the estate’s flagship, representing the pinnacle of vineyard selection and winemaking expertise. The 2022 vintage benefitted from a warm, consistent growing season, allowing grapes to reach optimal ripeness while retaining natural acidity and varietal purity.

Vines are planted on red-brown loam over limestone, which provides excellent drainage and mineral expression. Grapes were hand-harvested and partially destemmed, with fermentation in small open-top fermenters and gentle extraction to preserve complexity. The wine was aged for 18 months in French oak (50% new) to develop structure, spice, and depth without overpowering the fruit.

Appearance Deep, inky purple with crimson reflections, almost opaque at the centre. The wine’s density is evident through slow, syrupy legs, indicating full-bodied richness and significant ageing potential.

Aroma Pronounced aromas of blackberry, blackcurrant, and plum mingle with hints of chocolate, licorice, and warm spice, complemented by subtle floral notes and a touch of toasted oak.

Taste Full-bodied and concentrated, the palate delivers layers of dark fruit framed by fine, velvety tannins and balanced acidity. Nuances of clove, black pepper, and graphite integrate seamlessly, giving depth and complexity.

Finish Long, lingering, and elegant, with dark fruit and spice notes gradually fading into a persistent, structured finish.

Food Pairing Grilled ribeye steak enhances the wine’s power and depth. Slow-braised lamb shoulder with rosemary and garlic also pairs beautifully with its structured tannins and rich fruit.
