The Novum Marlborough Chardonnay 2023 beautifully embodies these ideals, showcasing Marlborough’s cooler-climate charm with striking freshness, nuanced complexity, and precise structure.

Novum’s Chardonnay vines benefit from carefully selected vineyard sites within Marlborough’s Southern Valleys, characterised by clay-rich loams and gravelly soils. This terroir, combined with the region’s maritime climate, imparts vivid acidity, expressive aromatics, and subtle mineral character. Hand-picked grapes undergo gentle whole-bunch pressing, fermentation with native yeasts, and thoughtful ageing in French oak barriques (approximately 15–20% new oak), enhancing complexity, texture, and delicate integration without overshadowing fruit purity.

Appearance: Bright, luminous pale gold with delicate green reflections, displaying exceptional clarity and youthful freshness. Medium viscosity gently coats the glass, forming elegant, slow-moving tears.

Aroma: Inviting, refined aromas of ripe white peach, fresh pear, and crisp green apple harmoniously mingling with delicate notes of citrus blossom, subtle almond pastry, and gentle mineral undertones.

Taste: Elegantly balanced palate, showcasing vibrant flavours of white peach, golden apple, and subtle citrus zest, complemented by refined nuances of toasted almonds, fresh brioche, and chalky minerality. Its precise acidity and subtle oak integration deliver remarkable harmony, complexity, and finesse.
