The Antinori family has been making wine for over 600 years, with a legacy that dates back to 1385. Known for their innovation and ability to blend tradition with modern techniques, they are one of Italy’s most prestigious wine producers. Castello della Sala, the estate where Muffato della Sala is produced, lies in Umbria, just outside Orvieto. This historic estate, acquired by Antinori in 1940, is renowned for its white wines, particularly those made from noble rot-affected grapes, which create beautifully complex and luscious dessert wines.

The vineyard sits at an elevation of 200-450 metres, benefiting from a cool microclimate that preserves freshness in the grapes. The unique combination of morning mists and warm autumn days encourages the development of Botrytis cinerea, or noble rot, which concentrates the sugars and flavours in the grapes. The blend typically consists of Sauvignon Blanc, Grechetto, Traminer, and Riesling, each adding layers of aromatic complexity. After fermentation, the wine is aged in small oak barrels, enhancing its depth and texture while maintaining a perfect balance between sweetness and acidity.

Appearance: Brilliant golden amber with a deep intensity, showing rich viscosity and thick, slow-moving legs that cling to the glass, indicating its opulence. The wine shimmers with hues of burnt orange and honey, while the rim fades into a lighter golden tone. Swirling reveals a luscious, almost syrupy movement, with light catching on its glossy surface, emphasising its concentration.

Aroma: An intense and layered bouquet of dried apricot, honey, saffron, and orange marmalade, lifted by delicate floral notes of acacia and hints of exotic spices. Undertones of caramelised pineapple and toasted almonds emerge, alongside subtle vanilla and butterscotch from its oak ageing.

Taste: Luxuriously rich and velvety, with a perfect interplay of sweetness and acidity. Lush flavours of candied citrus peel, ripe peach, and tropical fruits coat the palate, followed by layers of honeycomb, spice, and a delicate nuttiness. The noble rot influence brings a remarkable depth, with a balancing freshness that prevents it from becoming cloying.

Finish: Long and persistent, lingering with waves of honeyed fruit, caramel, and a refreshing citrus zest that leaves a beautifully clean impression. A gentle touch of spice and toasted hazelnut adds further complexity to the extended aftertaste.

Food Pairing: A stunning match for blue cheeses like Gorgonzola or Roquefort, where the wine’s sweetness balances the saltiness. Also pairs beautifully with foie gras, bringing out its richness while cutting through its texture.
