Aurelio Settimo is a traditional, family-run winery located in La Morra, one of Barolo’s most prestigious villages. Dedicated to producing classic, terroir-driven Barolo, the estate follows a philosophy of minimal intervention, allowing the Nebbiolo grape to fully express its character. Their Barolo DOCG 2015 comes from vineyards with calcareous clay soils, contributing to the wine’s structure and ageing potential. Aged in large Slavonian oak barrels, this Barolo reflects the elegance and finesse of La Morra’s terroir while maintaining the power and depth characteristic of the 2015 vintage.

Appearance: Deep garnet with an orange-tinged rim, showing the natural evolution of aged Nebbiolo. The wine is translucent yet richly coloured, with slow-moving, well-defined legs that suggest a full-bodied structure and balanced alcohol.

Aroma: Complex and layered, with notes of ripe red cherries, dried roses, and wild strawberries. Earthy hints of truffle, tobacco, and forest floor add depth, while undertones of liquorice, cedar, and balsamic provide further intrigue. As it opens, subtle nuances of dried orange peel, anise, and nutmeg emerge, enhancing its aromatic complexity.

Taste: Refined yet powerful, with a core of vibrant red fruit balanced by firm but well-integrated tannins. Flavours of sour cherry, pomegranate, and dried cranberries are interwoven with notes of leather, liquorice, and warm spice. The acidity is bright, lifting the palate and ensuring excellent ageing potential. A distinct mineral edge from the vineyard’s calcareous soils adds precision and elegance.

Finish: Exceptionally long and evolving, with lingering red fruit, floral notes, and a touch of savoury spice. The tannins remain structured yet polished, allowing the wine to unfold gracefully over time. A final hint of truffle, balsamic, and dried herbs leaves a sophisticated and memorable impression.

Food Pairing: Pairs beautifully with braised beef short ribs, where the wine’s acidity and tannins complement the richness of the dish while enhancing its depth of flavour. Also an excellent match with aged Castelmagno cheese, as the wine’s savoury complexity balances the cheese’s intense, nutty character.
