Cavalier Bartolomeo, Barolo San Lorenzo 2012
Cavalier Bartolomeo is a historic winery in Piemonte, known for its dedication to traditional Barolo winemaking. Their Barolo San Lorenzo 2012 comes from the prestigious San Lorenzo vineyard, an area within the Barolo DOCG known for producing wines of depth, structure, and elegance. The Nebbiolo grapes are grown on limestone and clay-rich soils, which provide both power and finesse. Aged in large oak barrels, this Barolo has spent over a decade developing complexity, softening its tannins while enhancing its aromatic intensity and refined texture.
Appearance: Deep garnet with an orange-tinged rim, reflecting the wine’s age and evolution. The wine is translucent yet rich in colour, with slow-moving, well-defined legs that suggest a structured body and balanced alcohol.
Aroma: Intensely aromatic and layered, with classic notes of dried roses, cherries, and wild strawberries. Earthy undertones of truffle, forest floor, and leather add depth, while hints of liquorice, tobacco, and cedar emerge from extended oak ageing. Subtle nuances of dried orange peel, balsamic, and nutmeg further enhance the wine’s aromatic complexity.
Taste: Silky yet structured, with a core of red fruit, including sour cherry, cranberry, and dried pomegranate, lifted by Nebbiolo’s signature acidity. The tannins are well-integrated yet still provide a firm backbone, supporting mid-palate flavours of liquorice, anise, and savoury herbs. Hints of cocoa, espresso, and a touch of dried fig develop with time in the glass, adding richness and depth.
Finish: Exceptionally long and evolving, with lingering notes of red fruit, floral spice, and an earthy, truffle-like savouriness. The tannins, though softened with age, still provide a refined grip, ensuring further ageing potential. A final flourish of balsamic, cedar, and dried roses leaves a sophisticated and lasting impression.
Food Pairing: Pairs beautifully with braised veal shank with saffron polenta, where the wine’s structure and acidity complement the richness of the dish. Also an excellent match with aged Castelmagno cheese, as the wine’s tannins balance the cheese’s sharpness while enhancing its nutty complexity
