Apeca is a boutique winery focused on crafting elegant sparkling wines that showcase the unique terroir of Alta Langa, one of Italy’s premier sparkling wine regions. Located in Piedmont, Alta Langa is renowned for its high-altitude vineyards, cool climate, and limestone-rich soils—ideal conditions for producing refined, méthode traditionnelle sparkling wines. Euforia Chardonnay Brut is a sophisticated and vibrant expression of Chardonnay, made using traditional methods that bring out finesse, freshness, and complexity.

The grapes are hand-harvested from high-altitude vineyards, where the significant day-night temperature variation enhances acidity and aromatic intensity. After gentle pressing, the base wine undergoes primary fermentation in stainless steel to preserve purity, followed by secondary fermentation in the bottle, where it ages on the lees for an extended period. This ageing process adds depth, creamy texture, and fine bubbles while maintaining the crisp, mineral-driven style characteristic of Alta Langa.

Appearance: Brilliant pale gold with a fine, persistent bead of bubbles, reflecting its elegance and extended lees ageing. The mousse is delicate yet vibrant, forming a silky layer on the surface of the wine. The clarity and bright reflections hint at its freshness and refined structure.

Aroma: Refined and expressive, with fresh citrus notes of lemon zest and green apple leading the way. Subtle floral hints of white blossom and acacia add elegance, while undertones of toasted brioche, hazelnut, and a touch of wet stone reveal the complexity gained from lees ageing. A whisper of honey and vanilla emerges as the wine opens up, enhancing its depth.

Taste: Crisp and beautifully balanced, with vibrant acidity lifting flavours of white peach, pear, and grapefruit. The creamy mousse adds a luxurious mouthfeel, while delicate notes of almond, pastry, and chalky minerality provide sophistication. The well-integrated lees character contributes a subtle richness, without overpowering the wine’s fresh, citrus-driven profile.

Finish: Long and refreshing, with lingering citrus zest, fine minerality, and a delicate touch of toasted hazelnut. The precise acidity ensures a clean, mouthwatering sensation, while the gentle creaminess from lees ageing leaves a polished, elegant impression. A final note of saline freshness adds complexity, making it a truly refined sparkling wine.
