Fattoria Castelvecchio Numero Otto 2019 is an organic, single-varietal Canaiolo from San Casciano in Val di Pesa, in the hills of Chianti Colli Fiorentini, Tuscany. From old-vine Canaiolo in a dedicated parcel, matured in wood for around eight months, this cuvée is designed to showcase the elegance, freshness and quiet intensity of a traditionally underrated Tuscan grape.

Appearance:

Bright, medium ruby with a lively, translucent core and subtle purplish highlights. The rim shows a touch of garnet development, and the tears are fine and reasonably slow, hinting at good concentration and elevated alcohol.

Aroma:

Fresh and inviting, with crunchy red cherry, wild strawberry and redcurrant. Floral tones of violet and rose lift from the glass, joined by gentle balsamic notes of eucalyptus and a faint hint of Mediterranean herbs. With air, subtle spice and a touch of sweet earth emerge, adding depth while keeping the profile airy and precise.

Taste:

Dry, medium-bodied and supple on the palate. Juicy red fruits (cherry, raspberry, red plum) are framed by vibrant, refreshing acidity. The tannins are fine, silky and non-aggressive, giving a gentle grip without heaviness. Delicate balsamic and herbal nuances weave through the mid-palate, along with a hint of sweet spice and cedar from its time in wood, maintaining a graceful, easy-drinking character.

Finish:

Medium-long, carried by red fruit, violet and a cool, balsamic echo. The texture remains smooth, with well-integrated tannins and a clean, slightly savoury finish that leaves the mouth refreshed and ready for another sip.

Food Pairing:

A versatile “vino da tutto pasto” that works beautifully with a wide range of dishes. Ideal with Tuscan salumi, fresh and semi-aged cheeses, roast chicken, pork cutlets or grilled sausages. It also pairs well with vegetable-based dishes such as bean stews, roasted vegetables, tomato-based pastas, and lighter fish preparations like fish soup or grilled tuna, where its freshness and gentle tannin won’t overpower the food.
