Il Borro Tuscana 2020
Il Borro Toscana 2020 is the estate’s flagship organic red from the Valdarno di Sopra area in Tuscany, a bold yet polished blend that marries international varieties with Tuscan character. Crafted from Merlot, Cabernet Sauvignon and Syrah (with proportions varying slightly by vintage) and aged in French oak, it shows ripe fruit generosity, fine tannins and a modern, luxurious style.
Appearance:
Deep, intense ruby with a dark, almost opaque core and subtle purple reflections. The tears are thick and slow, indicating high extract and generous alcohol.
Aroma:
Rich and enveloping, with layers of black cherry, plum, blackberry and cassis. Beneath the dark fruit sit notes of graphite, liquorice and dried Mediterranean herbs. With aeration, complex tones of cocoa, vanilla, sweet tobacco, cedar and a hint of leather emerge, adding warmth and depth.
Taste:
Dry, full-bodied and velvety on the palate. Ripe black fruits—black cherry, plum, blackcurrant—sit at the core, wrapped in finely integrated oak. The tannins are abundant yet smooth and rounded, giving a plush, mouth-coating texture. Hints of dark chocolate, espresso, sweet spice and a touch of balsamic herb unfold across the mid-palate, supported by balanced acidity that keeps the richness in check.
Finish:
Long, warm and persistent, with lingering notes of dark berries, cocoa, tobacco and spice. The tannins remain silky but present, and a faintly savoury, mineral echo provides lift, leaving a satisfying, luxurious impression.
Food Pairing:
Perfect with rich, hearty meat dishes: bistecca alla fiorentina, grilled ribeye, slow-braised beef or lamb shank. Excellent alongside game (venison, wild boar ragù), roasted duck or herb-crusted lamb. Mature hard cheeses, truffled pecorino, porcini dishes and cocoa- or red-wine-reduced sauces also resonate beautifully with its dark fruit and chocolatey, spicy complexity.
