Sato Les Violettes Pinot Noir 2023
Sato La Ferme de Sato “Les Violettes” Pinot Noir 2023 is a focused, whole-bunch-driven expression of Mount Pisa in Central Otago—perfumed, red-fruited and deliberately refined rather than blockbuster. Yoshiaki and Kyoko Sato lean on organic viticulture and a hands-off cellar philosophy (natural ferment, minimal additions) to let site and season lead, with “Les Violettes” drawn from the parcel(s) they consider the best Pinot Noir fruit in their Pisa Vineyard.
Appearance:
Pale to medium ruby with a translucent core and bright crimson rim.
Aroma:
Lifted violet and wild strawberry, red cherry and cranberry, with hints of citrus peel and peach skin, plus whole-bunch notes of dried herbs, subtle spice and a schist-and-quartz “wet stone” edge.
Taste:
Medium-bodied and finely contoured: crunchy red berries up front, then savoury stem spice, gentle earthy tones and a cool, mineral line through the mid-palate. Tannins are present but polished—more linear than plush—carried by bright, mouthwatering acidity and restrained oak influence (no new oak).
Finish:
Long, tapered and perfumed, with lingering red fruit, floral top-notes and a pithy, spicy grip that tightens the close.

Duck breast with cherry or plum; mushroom risotto; grilled lamb cutlets with rosemary; tuna (tataki) or salmon; roast beetroot with chèvre; charcuterie and alpine cheeses.
