Sato Schisteaux Chenin Blanc 2023 is a striking, small-batch Central Otago Chenin that leans into texture and mineral drive rather than overt fruitiness. Yoshiaki Sato (with Kyoko Sato) is known for a minimal-intervention approach—organic farming, natural ferments, and gentle handling—aiming to let the Mt Pisa schist speak clearly through the wine.
Appearance:
Pale straw to light gold, often with a faint natural haze; fine viscosity in the glass.
Aroma:
Quince, nashi pear and lemon pith over chamomile, beeswax and lanolin, with a pronounced wet-stone/chalky minerality and a subtle nutty, savoury oak edge.
Taste:
Dry and energetic. Bright, citrus-led acidity frames a layered, barrel-built texture—pear skin, baked apple, lemon zest, ginger and saline mineral notes—finishing with a gentle phenolic grip that keeps it tight and food-friendly.
Finish:
Long, pithy and chalk-dusty, with lingering salinity and a schist-like stony resonance.
