Sato Sous Bois Cabernet Franc 2023
Sato La Ferme de Sato “Sous Bois” Cabernet Franc 2023 is a finely etched, small-production Central Otago red that plays to Cabernet Franc’s strengths—perfume, savoury detail and a cool, mineral line—rather than sheer weight. True to Yoshiaki and Kyoko Sato’s minimal-intervention approach, it feels transparent and textural, with that “forest floor” character suggested by its name: lifted fruit over earthy, woodland complexity.
Appearance:
Medium ruby with a clear, translucent core and a bright garnet rim.
Aroma:
Red cherry, raspberry and plum skin, followed by violets, cedar and graphite. Savoury notes of dried herbs, bay leaf, tobacco, and damp earth/undergrowth build with air, with a faint leafy lift that reads as classic Cabernet Franc.
Taste:
Dry and medium-bodied, with crunchy red berries and sour cherry at the front. The palate turns savoury and stony—peppery spice, subtle stemmy/herbal tones, and a cool mineral edge—supported by fine, integrated tannins. Acidity is fresh and driving, keeping the wine poised and very food-friendly.
Finish:
Long, refined and gently chewy, tapering into a chalky grip with lingering red fruit, herbs and forest-floor savouriness.

Duck with lentils, herb-roast lamb, grilled pork cutlets, mushroom ragù, charred eggplant, or hard sheep’s milk cheeses.
