Patrick Sullivan’s Flint Chardonnay 2025
Patrick Sullivan’s Flint Chardonnay 2025 is a cool-climate Victorian Chardonnay shaped for clarity and restraint—more about energy, minerality and fine texture than overt richness. In keeping with Sullivan’s lean, site-expressive style, “Flint” typically shows citrus and orchard fruit wrapped around a saline, stony core, with understated oak and a quietly savoury, leesy complexity.
Appearance:
Pale straw with a faint green edge; bright and glossy in the glass.
Aroma:
Lemon pith, white peach and ripe pear, with hints of grapefruit, struck-flint minerality, and subtle almond meal. Gentle background notes of oatmeal, blossom and cool stone.
Taste:
Dry, precise and tensile—citrus and stone fruit up front, then a creamy-but-controlled mid-palate with fine lees texture. Mineral acidity keeps it lifted and mouth-watering, while restrained oak sits quietly in support, adding shape rather than sweetness.
Finish:
Long and chalky, tapering through citrus peel, saline minerality and a lingering nutty, savoury whisper.
Food Pairing:
Grilled prawns, roast chicken with lemon and thyme, scallops, creamy mushroom pasta, halibut with beurre blanc, or triple-cream cheeses.
