His wines are celebrated for their depth, elegance, and complexity, earning international acclaim and consistently high ratings. The El Chozo del Bombón Colección N.3 2015 is a limited-edition Reserva that showcases the exceptional ageing potential of Tempranillo, combining power with finesse.
Sourced from old vines in Rioja, the grapes benefit from the region’s diverse terroirs, ranging from limestone-rich soils to clay and sand, each contributing to the wine’s structure and character. The high-altitude vineyards allow for slow ripening, preserving acidity while intensifying flavour. The wine undergoes long maceration for deep colour and tannin extraction, followed by extended ageing in French oak barrels, adding layers of spice, vanilla, and complexity.
Appearance Deep garnet with an inky core and slight brick hues at the rim, reflecting its age and slow evolution. The wine’s viscosity creates slow, elegant legs in the glass, suggesting richness and structure. As it swirls, its density hints at concentration and careful oak ageing, while the subtle rim variation signals its developing complexity.
Aroma Intensely aromatic, with layers of ripe black cherry, plum, and cassis. Secondary notes of tobacco, cedar, and cocoa emerge from the extended oak ageing, while hints of dried herbs, truffle, and graphite add complexity. A touch of leather and balsamic undertones reflect its time in bottle, contributing to a beautifully evolved bouquet. As the wine opens, delicate floral hints of dried violets and a whisper of vanilla round out the nose.
Taste Powerful yet refined, with concentrated dark fruit flavours of blackberry, fig, and ripe cherry. The palate reveals layers of spice, including clove, cinnamon, and black pepper, balanced by savoury elements of roasted coffee, liquorice, and a subtle earthiness. The tannins are fine-grained and well-integrated, providing structure without overpowering the silky texture. A delicate touch of toasted oak adds warmth, complementing the wine’s deep, lingering intensity.
Finish Long and evolving, with lingering notes of dark chocolate, blackcurrant, and a delicate smokiness. The acidity keeps the wine vibrant, while the fine tannins give it a polished, seamless finish that unfolds beautifully with each sip. Hints of dried fruit and spice persist, leaving a refined and sophisticated impression.
Food Pairing Slow-roasted lamb with rosemary and garlic enhances the wine’s rich texture and deep savoury notes, creating a classic pairing. Aged Manchego cheese with fig preserves highlights its dark fruit and spice, balancing the wine’s intensity with a touch of sweetness.
