Palmer & Co is one of the most respected Champagne houses, known for its elegant, long-aged cuvées that showcase the finesse of the region’s terroir. Founded in 1947 by a group of seven grower families, the house quickly gained a reputation for its meticulous blending and extended lees ageing, which contribute to the depth and complexity of its wines. Based in Reims, Palmer & Co sources fruit primarily from Premier and Grand Cru vineyards in the Montagne de Reims, ensuring a consistently high standard across its Champagnes. The Blanc de Blancs style is a house speciality, expressing the purity and precision of Chardonnay.
The 1995 vintage was marked by a warm summer and ideal harvest conditions, resulting in wines of great structure and longevity. Aged extensively in magnum format, this Blanc de Blancs has developed extraordinary richness and complexity while maintaining its freshness. The chalky soils of the Côte des Blancs contribute intense minerality and a fine, elegant mousse.
Appearance: A luminous deep gold with vibrant amber reflections, indicative of its extended ageing. The wine displays remarkable clarity with fine, persistent bubbles rising in delicate streams. The mousse is refined and persistent, forming a creamy crown on the surface. Viscous and concentrated, it moves elegantly in the glass, leaving a soft shimmer as light catches its surface.
Aroma: Incredibly complex and layered, with rich aromas of baked apple, candied citrus, and toasted almond. Hints of honey, brioche, and hazelnut emerge alongside delicate floral notes of acacia and dried chamomile. A pronounced chalky minerality lingers, adding depth and structure to the bouquet.
Taste: Opulent yet precise, delivering a harmonious balance between aged richness and vibrant acidity. Flavours of caramelised pear, lemon curd, and roasted hazelnuts unfold, followed by subtle notes of marzipan and vanilla from extended lees ageing. The fine mousse enhances the wine’s elegance, while a distinct mineral core keeps it fresh and structured.
Finish: Exceptionally long and complex, with lingering notes of citrus zest, toasted brioche, and crushed oyster shell minerality. The creamy texture and persistent acidity leave a lasting impression of sophistication and depth.
Food Pairing: A stunning match for seared turbot with beurre blanc, lobster thermidor, or roasted guinea fowl with truffle. Pairs beautifully with aged Comté or Parmesan, as well as dishes featuring delicate mushrooms or white truffle. The complexity of this Champagne also allows it to stand up to lightly spiced dishes such as saffron-infused seafood or Moroccan-style lemon chicken.
