Dexter Chardonnay 2023
Dexter is an emerging producer in Australia, gaining recognition for crafting elegant, fruit-driven Chardonnays with precise balance and textural complexity. The 2023 vintage benefited from a temperate growing season, producing grapes with bright acidity, ripe stone fruit, and a natural minerality that shines through in the finished wine.
The vineyards are planted on well-drained soils, often comprising sandy loam over clay, which encourages deep root growth and concentration of flavour. Grapes were hand-picked and gently pressed, with fermentation in a mix of stainless steel and neutral oak barrels to preserve freshness while adding subtle texture and complexity.
Appearance Pale straw with golden highlights, reflecting the wine’s medium body and clarity. Slow-moving legs indicate moderate alcohol and a refined texture.
Aroma Fresh aromas of white peach, nectarine, and citrus blossom dominate, complemented by hints of toasted almond and subtle flint notes. Gentle nuances of vanilla and lightly creamed butter emerge with aeration.
Taste The palate is crisp and lively, with stone fruit and citrus flavours at the forefront. Balanced acidity provides freshness and energy, while soft oak integration adds texture and a touch of richness without overwhelming the fruit.
Finish Clean and persistent, with lingering notes of peach, white blossom, and delicate mineral undertones, leaving a refreshing and refined impression.
Food Pairing Pan-seared barramundi with lemon and herb butter enhances the wine’s bright fruit and acidity. Creamy chicken risotto complements its gentle texture and subtle oak nuances.
