Arnaud Baillot Gevrey-Chambertin 2021
Arnaud Baillot is a rising star in Burgundy, crafting elegant and terroir-driven wines that reflect the unique character of each appellation. Based in Beaune, his domaine focuses on small-batch, artisanal winemaking, with meticulous attention to vineyard expression. Gevrey-Chambertin, one of Burgundy’s most revered villages, is known for producing structured and complex Pinot Noir, with a reputation for age-worthy wines that balance power and finesse.
The 2021 vintage comes from carefully selected parcels within Gevrey-Chambertin, where the limestone-rich soils and cool climate contribute to the wine’s precision and depth. The wine is fermented using traditional methods, including gentle extraction to preserve purity, and aged in French oak barrels (a mix of new and used) to enhance texture without overwhelming the delicate fruit.
Appearance: A vibrant ruby-red with a slight garnet edge, showing its youthful energy. The clarity is excellent, with a silky, almost translucent quality. Swirling reveals fine, slow-moving legs, hinting at a refined structure. Light dances elegantly on its surface, accentuating its brightness and freshness.
Aroma: Intensely aromatic, with layers of ripe red cherries, wild strawberries, and blackcurrants. Earthy undertones of damp forest floor and truffle add depth, alongside delicate floral hints of violets and rose petals. Subtle spice notes of cinnamon, clove, and a touch of vanilla emerge from well-integrated oak influence.
Taste: Silky yet structured, with a vibrant acidity that lifts the red berry fruit. The mid-palate shows fine-grained tannins, adding elegance and a slight grip. Earthy and savoury nuances develop alongside subtle oak spice, with a mineral-driven freshness that reflects the limestone soils. The wine is beautifully balanced, offering both finesse and ageing potential.
Finish: Long and refined, leaving lingering notes of cherry, crushed herbs, and a whisper of smoky spice. The tannins remain polished, with the acidity ensuring a bright, energetic conclusion.
Food Pairing: A perfect match for duck breast with cherry sauce, herb-crusted lamb, or a wild mushroom and truffle pasta. Also pairs beautifully with aged Comté cheese or a classic coq au vin
