Au Bon Climat, founded by Jim Clendenen in 1982, is renowned for its exceptional Pinot Noir and Chardonnay wines, drawing inspiration from the Burgundy region of France. Clendenen, often referred to as the "Mind Behind," was a pivotal figure in establishing Santa Barbara County as a premier wine region. His dedication to creating wines with restraint and elegance has earned the winery a global reputation. One of their standout wines is the "Nuits-Blanches au Bouge" Chardonnay, which showcases the winery's dedication to crafting wines with a Burgundian finesse and California’s unique terroir.

The "Nuits-Blanches au Bouge" Chardonnay comes from the Bien Nacido Vineyard, located in the Santa Maria Valley. This vineyard is known for its cool climate, influenced by the Pacific Ocean, which brings morning fog and afternoon breezes, creating ideal conditions for Chardonnay. The calcareous soils add complexity and minerality to the wines. Au Bon Climat uses traditional winemaking techniques, including barrel fermentation and aging in French oak, which adds depth and richness to the wine while maintaining its vibrant acidity and fruit-forward character.

Appearance: This Chardonnay presents a brilliant, pale golden colour with a subtle green hue, indicating its freshness and youth.

Aroma: The nose is expressive with aromas of lemon zest, white peach, and green apple, complemented by notes of toasted almond, vanilla, and a hint of flinty minerality.

Taste: On the palate, this wine offers a beautiful balance of bright acidity and creamy texture. Flavours of ripe citrus, apricot, and pear are interwoven with nuances of buttered toast and a touch of honey, reflecting its time in French oak barrels.

Finish: The finish is long and elegant, with a lingering minerality and a hint of spice, showcasing the wine's complexity and structure.

Pairing: Pair this exquisite Chardonnay with grilled lobster in a lemon butter and tarragon emulsion, as the wine’s acidity will cut through the richness of the dish, while its creamy texture complements the tarragon emulsion beautifully.
