Port Phillip Estate Sauvignon 2023 is a refined Mornington Peninsula Sauvignon Blanc crafted under the guidance of winemaker Tim Perrin. Produced from a small single-vineyard parcel and made with a minimal-intervention philosophy, it combines varietal freshness with subtle texture gained from fermentation in seasoned French oak and extended lees contact. The result is a sophisticated expression of Sauvignon Blanc that balances vibrant fruit with complexity and elegance.

Appearance:

Pale straw with bright green hues and excellent clarity.

Aroma:

Lifted and expressive, showing gooseberry, grapefruit and lime, complemented by hints of lychee blossom, fresh herbs, nettle and delicate flinty mineral notes.

Taste:

Fresh and finely structured, with vibrant citrus and grapefruit flavours leading into white stone fruit and subtle herbal nuances. Lees ageing contributes a creamy texture that adds depth without compromising freshness.

Finish:

Long, crisp and persistent, driven by lively acidity and lingering citrus, mineral and subtle savoury notes.

Food Pairing:

Fresh oysters, grilled prawns, seared scallops, goat’s cheese salads, herb-crusted white fish, sushi and light vegetable dishes.
