Singlefile ‘Clement V’ 2021
Singlefile Wines, based in the Great Southern region of Western Australia, consistently produces wines that reflect the elegance and precision of cool-climate viticulture. The ‘Clement V’ 2021 is a Rhône-style blend of Shiraz, Grenache, and Mourvèdre, crafted to pay homage to the wines of the Southern Rhône while expressing the distinct character of Western Australia's terroir. Named after Pope Clement V, who relocated the papacy to Avignon, this blend showcases Singlefile's mastery of both traditional and modern winemaking techniques.
The cool climate of the Great Southern region, particularly in Denmark, provides a long ripening season, allowing the grapes to develop full flavour while retaining natural acidity. The wine is fermented in small batches and aged in a combination of French oak barrels, giving it structure and depth while maintaining its fresh fruit character.
Appearance: Medium ruby with a slight purple hue, indicating its youth and vibrancy.
Aroma: The nose is enticing, with aromas of red cherries, raspberries, and dark plums, layered with notes of dried herbs, lavender, black pepper, and a hint of earthy spices, like cloves and anise.
Taste: Medium-bodied with a fine balance of fruit and spice. Flavours of ripe red berries, such as raspberry and redcurrant, are complemented by darker fruit tones like plum, along with notes of black pepper, dried rosemary, and a touch of savoury earthiness. The tannins are smooth, and the wine displays a fresh, lively acidity, adding elegance and length to the palate.
Finish: The finish is long and harmonious, with lingering notes of red fruit and subtle spice, supported by a soft, refined tannin structure.
Food Pairing: Singlefile 'Clement V' 2021 pairs wonderfully with Mediterranean-inspired dishes, such as grilled lamb with rosemary or slow-roasted pork shoulder. The wine’s spice and herbaceous notes complement the savoury, rich flavours of these dishes, while its acidity balances the richness of the meat. It also pairs well with vegetable-based dishes like ratatouille, where its bright fruit and earthiness enhance the layers of flavours in the dish.
