Post & Beam is a boutique Australian winery known for producing structured and expressive Cabernet Sauvignons that highlight the fruit purity and elegance of their vineyards. The 2021 vintage experienced a balanced growing season with warm days and cool nights, allowing grapes to ripen evenly while retaining natural acidity and aromatic complexity.

The vineyards are planted on well-drained soils with a mix of clay and loam, which encourage deep root development and concentration of flavours. Grapes were hand-harvested and fermented in small batches, with careful use of oak maturation to integrate subtle spice and texture without masking the varietal character.

Appearance Deep ruby with hints of garnet around the rim. The wine shows excellent clarity, with medium to full body suggested by its slow-moving, well-defined legs.

Aroma Vibrant aromas of cassis, black cherry, and ripe plum are complemented by hints of cedar, graphite, and a touch of sweet vanilla from oak ageing. Subtle herbal notes and a trace of dark chocolate add complexity.

Taste The palate is rich and structured, offering concentrated dark fruit layers interwoven with spice, tobacco, and a touch of minerality. Tannins are firm yet polished, providing a solid framework while maintaining smoothness. The mid-palate reveals a delicate balance of fruit and savoury elements.

Finish Long and persistent, with lingering notes of blackcurrant, cedar, and a subtle earthy undertone. The tannins leave a velvety impression, suggesting excellent ageing potential.

Food Pairing Grilled ribeye with a red wine reduction enhances the wine’s bold fruit and tannins. Roasted lamb shoulder with rosemary complements the earthy and spice notes.
