Valmur is one of Chablis' most prestigious Grand Cru vineyards, known for its Kimmeridgian limestone soils that impart a striking mineral backbone to the wine. The vineyard’s east and southeast-facing slopes ensure slow, even ripening, preserving acidity while allowing for the development of complex flavours. Fermentation and ageing in a combination of stainless steel and neutral oak allow for a balance between freshness and depth, while extended lees contact enhances texture and complexity.
Appearance: Pale gold with subtle green reflections, displaying brilliant clarity with a slightly richer texture due to the lack of filtration. The wine’s viscosity hints at its concentration and ageing potential, while its luminous sheen suggests vibrancy and finesse.
Aroma: Expressive and layered, with aromas of lemon zest, ripe pear, and crisp green apple. Subtle notes of crushed oyster shell and wet stone highlight the classic Chablis minerality, while delicate floral hints of acacia and chamomile add elegance. A faint touch of hazelnut and brioche from lees ageing enhances the aromatic depth.
Taste: Powerful yet precise, with a vibrant acidity lifting flavours of citrus, white peach, and crisp apple.
