Domaine Ghislain Kohut, Gevrey Chambertin 2021
Domaine Ghislain Kohut is a rising talent in the Côte de Nuits, known for crafting expressive and terroir-driven wines. Based in Fixin, he also produces wines from neighbouring Gevrey-Chambertin, an appellation celebrated for its power and complexity. Kohut follows sustainable viticulture, working with old vines and low yields to ensure concentration and depth. His approach in the cellar is gentle and precise, using partial whole-cluster fermentation and careful oak ageing to balance structure with finesse. The result is a Gevrey-Chambertin that reflects both the strength of the terroir and a modern, refined touch.
The 2021 vintage in Burgundy was challenging, with spring frosts and lower yields, but it produced wines of freshness and elegance. Gevrey-Chambertin’s terroir—rich in limestone and clay—gives its wines depth, firm tannins, and a strong mineral backbone. Kohut’s careful handling of the vintage has resulted in a wine with purity, precision, and excellent ageing potential.
Appearance: A deep ruby with flashes of garnet at the rim, showing both concentration and youthful vibrancy. The wine is clear and luminous, with slow-moving legs indicating a balanced structure.
Aroma: Intense and layered, with ripe black cherries, wild blackberries, and redcurrants at the forefront. Floral hints of dried rose petals and violets add elegance, while earthy undertones of truffle, graphite, and a whisper of smoky oak provide depth. Subtle notes of black pepper, anise, and dark chocolate emerge as the wine opens.
Taste: Bold yet refined, with a rich core of dark berry fruit supported by fine-grained tannins and lively acidity. The palate reveals layers of black cherry, plum, and cassis, intertwined with savoury spice, crushed stone, and a touch of cedar. The texture is velvety but structured, with the wine’s minerality adding precision and length.
Finish: Long and complex, with lingering notes of black fruits, forest floor, and a gentle smokiness. As the wine evolves in the glass, hints of dried herbs, cocoa, and sweet spice emerge, leaving a lasting impression of elegance and depth.
Food Pairing: Perfect with roasted venison loin, where the wine’s bold structure complements the gamey richness while its acidity balances the dish. Also pairs beautifully with duck breast in a blackcurrant reduction, enhancing both the fruit and savoury elements. Aged Beaufort cheese would be an excellent match, bringing out the wine’s nutty and mineral nuances.
