Established in 1912 by Marcel Ott, the estate has built a reputation for its dedication to quality and terroir expression. The 2022 vintage of By.Ott continues this tradition, offering a fresh, vibrant, and well-structured rosé that embodies the sunny, Mediterranean climate of Provence.
The terroir, with its mix of limestone and schist soils, combined with the cooling influence of the Mediterranean Sea, allows the grapes—mainly Grenache, Cinsault, and Syrah—to ripen slowly, preserving freshness and delicate fruit flavours. The wine is vinified with a focus on retaining aromatic intensity and bright acidity, resulting in a refined, food-friendly rosé.
Appearance: Pale salmon pink with a delicate, luminous hue—classic for a Provençal rosé.
Aroma: Fresh and aromatic, with notes of wild strawberry, peach, and citrus, alongside floral hints of rose petal and orange blossom. There’s a subtle minerality and a touch of Mediterranean herbs like thyme and lavender, adding complexity to the bouquet.
Taste: Crisp and refreshing, with flavours of red berries—strawberry, raspberry—intertwined with white peach, grapefruit, and a touch of nectarine. The palate is light and lively, with a beautiful balance between the juicy fruit and a fine, chalky minerality. The wine’s acidity is bright, providing a clean, mouthwatering structure.
Finish: Long and refreshing, with lingering notes of citrus zest, peach, and a subtle hint of salinity that speaks to its coastal origins. The finish is crisp, leaving the palate fresh and eager for another sip.
Pairings: Heirloom tomato with aged balsamic, stracciatella, fried mung bean sprouts, olive soil, and mojo verde. The wine’s acidity and citrus notes will complement the fresh tomatoes and balsamic, while its delicate fruit will balance the creamy stracciatella.
