Willows is a boutique Australian winery focusing on small-lot, hand-crafted wines that highlight the intensity and character of traditional Mediterranean grape varieties in cooler Australian regions. The vineyard is situated on free-draining red clay and sandy loam soils, ideal for Mataro, allowing moderate vine stress that concentrates flavours. The grapes were hand-harvested and destemmed, undergoing fermentation with native yeasts in open-top fermenters. Maturation occurred in seasoned French oak barrels, enhancing complexity and silky texture without overpowering the varietal character.

Appearance Deep ruby with purple highlights, showing a medium to full-bodied structure. The clarity is excellent, and the wine has slow-moving, well-defined legs indicating good concentration and alcohol.

Aroma Expressive nose of ripe blackberry, blueberry, and dark plum, layered with subtle spice, dried herbs, and hints of dark chocolate. With aeration, floral and earthy nuances emerge, adding depth.
