Spier, founded in 1692, has long been at the forefront of South African winemaking, combining heritage with a strong focus on sustainability. Their Good Nature Organic range reflects a modern commitment to environmentally friendly viticulture, producing wines certified organic and crafted with minimal intervention. The Sauvignon Blanc in this collection shows a fresher, more vibrant side of Stellenbosch fruit, made in a style that highlights purity and balance rather than oak or heavy winemaking influence.
The vineyards are farmed organically, with no synthetic fertilisers or pesticides, encouraging biodiversity and soil health. Situated in the cooler pockets of Stellenbosch and coastal regions influenced by breezes from False Bay, the fruit retains excellent acidity and aromatic lift. Fermentation is done in stainless steel to preserve freshness, and the wine is left on lees briefly to build texture and complexity.
Appearance: Pale straw with greenish reflections, bright and youthful in the glass.
Aroma: Expressive and zesty, with notes of gooseberry, passionfruit, and lime, lifted by hints of fresh herbs, cut grass, and a subtle saline edge.
Taste: Crisp and refreshing, with citrus and tropical fruit at the core. Flavours of grapefruit, guava, and green apple are balanced by herbal nuances and lively acidity, giving a mouth-watering quality.
Finish: Clean and vibrant, with lingering citrus zest and a light mineral touch.
Food Pairing: Excellent with grilled prawns and salsa verde, or a chèvre and asparagus tart.
