The 2019 Tasi Ripasso Superiore is a remarkable expression of the Valpolicella tradition, originating from a unique vineyard in Italy. This wine is made in the historic Ripasso method, a hallmark of the Veneto region, where the wine undergoes a second fermentation in contact with Amarone skins, imparting a distinctive character and complexity.

Vineyard and Winemaking Process: The Tasi Ripasso Superiore comes from a vineyard grown in an old marl quarry at an altitude of 450 meters, offering a unique terroir that contributes to the wine's distinct profile. The vineyard is characterized by ripe red fruit aromas and light tannins, resulting in a wine with a long finish. The Ripasso method involves a second fermentation in contact with Amarone skins for about 15 days, followed by maturation in oak barrels and tonons for 24 months and an additional 6 months in the bottle.

Tasting Note:

  • Appearance: Exhibits a smooth and inviting appearance, typical of a well-crafted Ripasso.
  • Aroma: The nose is a delightful blend of cherry, red fruit, and vanilla, complemented by hints of leather, offering a complex and inviting bouquet.
  • Taste: On the palate, the wine displays a harmonious balance of bright, sweet red and black fruit characters, embraced by very fine long tannins. The fresh acidity characteristic of Tasi wines makes this a particularly enjoyable drink.
  • Finish: The finish is smooth and oaky, leaving a lasting impression of elegance and finesse.

Food Pairing:

  • Patatas Bravas with Harissa (Wineology): The wine's bright fruit flavors and fine tannins will complement the spicy and bold flavors of the dish.

The 2019 Tasi Ripasso Superiore, with its unique production process and exquisite flavor profile, is a testament to the rich winemaking heritage of Valpolicella and the innovative spirit of Tasi, making it a perfect pairing for the diverse culinary creations at Wineology
