Penfolds Bin 389 Cabernet Shiraz 2022
Known for its exceptional quality and innovation, Penfolds has consistently produced world-class wines.
The Penfolds Bin 389 Cabernet Shiraz, often referred to as "Baby Grange," was first created in 1960 and has since become one of their most celebrated labels, blending the structure of Cabernet Sauvignon with the richness of Shiraz.
The unique terroir of South Australia, specifically the Barossa Valley, McLaren Vale, and Coonawarra regions, contributes significantly to the character of this wine. The diverse soil types, combined with a warm climate and meticulous viticulture, result in grapes of exceptional quality. The wine undergoes maturation in American oak, previously used for Penfolds' Grange, imparting complex flavours and a robust structure.
Appearance: Deep, opaque crimson with a garnet rim, showcasing its youthful vibrancy.
Aroma: A rich bouquet of dark berries, blackcurrant, and plum, intertwined with notes of vanilla, dark chocolate, and a hint of mint. Subtle oak and spice undertones add complexity.
Taste: A full-bodied palate with concentrated flavours of blackberry, cassis, and ripe plum. The integration of Cabernet's tannins with Shiraz's fruitiness creates a balanced and harmonious profile. Layers of mocha, cedar, and black pepper emerge, adding depth and sophistication.
Finish: Long and persistent, with fine-grained tannins and a lingering aftertaste of dark fruit and savoury oak.
Food pairing: This wine pairs beautifully with a chargrilled ribeye steak, preferably served with roasted garlic mashed potatoes and a red wine reduction. The robust flavours of the Bin 389 complement the richness of the steak, while the wine's tannins cut through the meat's succulence.
