Domaine Chanson, established in 1750, is one of the most historic wineries in Burgundy. It is known for producing refined wines that express the unique terroir of their vineyards, with a focus on Premier and Grand Cru sites. The Domaine Chanson Savigny-Les-Beaune Premier Cru Les Hauts Marconnets 2018 is a fine example of the winery’s dedication to crafting elegant wines that showcase the individuality of the Savigny-Les-Beaune appellation. The vineyard is located on a hill above Beaune, giving it ideal sun exposure and well-draining limestone soils that allow for structured yet graceful wines.

Savigny-Les-Beaune is renowned for producing lighter, more delicate red Burgundies compared to some of the more powerful neighbouring villages. The 2018 vintage was warm, allowing the grapes to ripen fully, resulting in a Pinot Noir with concentration and depth while still maintaining the elegance typical of the region. Domaine Chanson employs minimal intervention, using whole cluster fermentation and careful oak aging to enhance the wine's complexity and texture without overshadowing its fruit.

Appearance: A vibrant ruby red with brilliant clarity, indicating youth and freshness.

Aroma: Aromas of ripe red cherries, raspberries, and strawberries leap from the glass, accompanied by subtle floral notes of violet and rose. There are also hints of earthy undertones, like forest floor, and a touch of sweet spice from oak aging.

Taste: On the palate, the wine is fresh and lively, with juicy red fruit flavours of cherry and red currant. These are balanced by earthy, savoury notes and a touch of spice, including cinnamon and clove. The wine has fine-grained tannins, a medium body, and a refreshing acidity that gives it great balance and length.

Finish: The finish is long and elegant, with lingering red fruit, soft spice, and a slight mineral edge, reflecting the wine’s limestone-rich terroir.

Food pairing: This Pinot Noir pairs beautifully with roasted pork tenderloin, where the wine’s acidity cuts through the richness of the meat, and its red fruit complements the savoury flavours. It also pairs well with a wild mushroom risotto, with the earthy notes of the wine mirroring the flavours of the mushrooms and enhancing the creamy texture of the dish.
