Cabreo Il Borgo, produced by Tenute Folonari in Tuscany, is a quintessential Super Tuscan, blending native Sangiovese with Cabernet Sauvignon. First crafted in 1982, Il Borgo has become an iconic expression of the Super Tuscan style, embodying both the elegance of traditional Italian wines and the power of international varietals. The 2017 vintage reflects a warm growing season, resulting in a wine with ripe fruit, soft tannins, and a well-balanced structure. Folonari’s vineyards, located in Greve in Chianti, benefit from the rolling hills and limestone soils, ideal for producing complex, age-worthy wines.

The combination of Sangiovese’s bright acidity and Cabernet Sauvignon’s rich tannins and structure makes Il Borgo a versatile and elegant wine, with both immediate appeal and long-term aging potential.

Appearance: Deep ruby with garnet reflections, indicating both richness and some early evolution.

Aroma: A complex bouquet of ripe black cherry, blackberry, and plum, accented by notes of tobacco, cedar, and a hint of spice. As it opens, aromas of dried herbs, leather, and a touch of vanilla from the oak aging become more pronounced, adding depth and complexity.

Taste: Full-bodied and refined, the palate offers layers of dark fruit—blackcurrant, plum, and cherry—balanced by savoury notes of earth, dried herbs, and a hint of black pepper. The wine’s tannins are smooth and well-integrated, giving it structure without overpowering the fresh acidity that Sangiovese brings. The touch of Cabernet Sauvignon provides depth, making the wine more robust and textured.

Finish: Long and elegant, with lingering flavours of dark fruit, spice, and a subtle minerality. The balance between acidity and tannin ensures a refined, polished finish that promises further development with aging.

Pairings: Charred venison rack with mesquite, black cabbage, and caramelized pearl onion. The gamey venison will enhance the wine’s earthy undertones, while its tannins and acidity will stand up to the richness of the meat.
