Au Bon Climat, founded by the renowned winemaker Jim Clendenen in 1982, is celebrated for its commitment to creating wines with Old World elegance and finesse from California’s Central Coast. The winery has garnered international acclaim, particularly for its Chardonnays and Pinot Noirs. Clendenen’s philosophy was deeply influenced by Burgundy, which is evident in the restraint and balance of his wines. Los Alamos Vineyard, located in Santa Barbara County, benefits from a unique microclimate ideal for growing Chardonnay. The vineyard is situated in a valley that allows for cool coastal breezes and fog to roll in, moderating temperatures and preserving acidity in the grapes. The sandy and clay loam soils provide excellent drainage and contribute to the mineral complexity of the wine. Au Bon Climat’s approach in the cellar involves traditional techniques, such as barrel fermentation and extended aging on lees, to add depth and texture to the wine.

Appearance: The wine presents a pale straw colour with a brilliant, reflective sheen, hinting at its vibrant acidity.

Aroma: The nose is expressive, featuring aromas of ripe green apple, lemon zest, and white peach, intertwined with notes of almond, brioche, and a hint of wet stone, showcasing its time in oak and minerality.

Taste: On the palate, this Chardonnay is beautifully balanced, with flavours of citrus and orchard fruits such as pear and apple. There is a creamy, round mouthfeel, accompanied by subtle vanilla and toasted almond from the oak, which enhances its complexity without overpowering the fruit.

Finish: The finish is long and refreshing, marked by crisp acidity and lingering notes of citrus and a touch of salinity that invites another sip.

Pairing: This wine pairs wonderfully with baked lobster with parsley butter and a tarragon butter emulsion. The Chardonnay’s bright acidity and citrus notes complement the richness of the lobster and enhance the tarragon flavour of the sauce, while its creamy texture matches the dish’s buttery elements.
