By Farr, located in the Geelong region of Victoria, Australia, is one of the country’s most acclaimed boutique wineries. Established by Gary Farr, a former winemaker at Domaine Dujac in Burgundy, By Farr is renowned for its Burgundian-inspired wines that emphasize terroir and elegance. The GC Chardonnay is a standout, produced from the estate's finest vineyard blocks, with the initials "GC" referring to Gary’s son, Nick, who now leads the winemaking. The 2021 vintage continues the estate’s tradition of crafting Chardonnays that are complex, textural, and structured.
The vineyards, characterized by their limestone-rich soils and cool climate, provide the perfect conditions for growing premium Chardonnay. The use of wild fermentation, minimal intervention, and aging in a mix of new and old French oak barrels allows the wine to develop layers of flavour while maintaining its natural acidity and minerality.
Appearance: Pale gold with a bright, clear hue, reflecting both youth and elegance.
Aroma: An enticing bouquet of white peach, lemon curd, and nectarine, intertwined with subtle notes of hazelnut, flint, and lightly toasted oak. There’s a hint of brioche and almond, showing the influence of lees aging and barrel fermentation.
Taste: The palate is rich and complex, yet beautifully balanced with vibrant acidity. Flavors of stone fruits—peach, nectarine—are supported by citrus notes of lemon zest and grapefruit, along with creamy, nutty nuances from the oak and lees contact. The wine has a distinct mineral backbone, giving it a refined, elegant structure that cuts through the richer elements.
Finish: Long, crisp, and focused, with lingering notes of lemon curd, almond, and a touch of smoky flint. The acidity provides a refreshing lift, ensuring the wine finishes clean and precise.
Pairings: Crab and Bug agnolotti with spinach, chili, dried shallot, and lemon butter sugo. The wine’s vibrant acidity and minerality will enhance the richness of the lemon butter, while the stone fruit and citrus notes will complement the sweetness of the crab and bug.
Baked scallops with smoked cerdito, chive, parsley, and fennel. The creamy texture and bright acidity of the Chardonnay will pair perfectly with the delicate scallops and fennel, while the wine’s subtle oak and nuttiness will match the smokiness of the cerdito.
