Shaw + Smith, based in the cool-climate Adelaide Hills region of South Australia, has established a reputation for producing elegant and refined wines. While the winery is well-known for its whites, their Shiraz is increasingly recognised for its complexity and finesse. The 2021 vintage showcases Shaw + Smith’s dedication to crafting a cool-climate style of Shiraz that balances ripe fruit with savoury and spicy notes, highlighting the region’s unique terroir.

Adelaide Hills is cooler than many of Australia’s traditional Shiraz-growing regions, which results in a wine that is more restrained and aromatic. The 2021 Shiraz was fermented in a mix of stainless steel and open fermenters, followed by maturation in French oak barrels, which lends structure and a touch of elegance to the final wine.

Appearance: Deep ruby with purple highlights, showing youthful vibrancy.

Aroma: Aromas of dark cherries, blackberries, and plums, complemented by hints of black pepper, cloves, and a subtle earthiness.

Taste: Medium-bodied with silky tannins and fresh acidity. Flavours of dark berries, black pepper, and savoury herbs are layered with a gentle touch of oak, adding complexity and balance.

Finish: Long and smooth, with lingering notes of spice, dark fruit, and a touch of minerality.

Food Pairing: This Shiraz pairs beautifully with grilled lamb chops or roasted vegetables, where the wine’s spice and savoury notes enhance the depth of the dish without overpowering it.
